DUBAI, UAE — Since opening in Jumeirah 1, TANSŌ has operated as a chef-led dining gallery. Alongside its core menu, the restaurant runs a seasonal programme built around volumes — limited expressions through which ingredients, season and context are explored.
The first is Daichi (大地).
Meaning “earth” or “land,” Daichi opens the programme. For many Japanese restaurants outside Japan, authenticity is measured by proximity to origin. Daichi begins elsewhere. Rather than looking outward for ingredients, TANSŌ turns to the Gulf in which it operates, working with the farmers, fishermen and producers whose hands shape the region’s larder and the ingredients that define it.
At its core, Daichi studies what contemporary Japanese cooking does when it is grounded in place.
For the brigade, that means treating regional ingredients through the discipline of Japanese technique and flavour logic — with place, season and product as material.
The volume runs to six dishes, each named for the landscape it draws on. Root opens with barbeer, fig and candied walnuts in a sansho vinaigrette. Coast sets wild Gulf hammour against a yuzu miso beurre blanc and leek ash oil. Gulf turns to Omani lobster with dashi mayo and charred lemon. Palm closes on Medjool date and Booza ashta with tonka and miso caramel.
“We weren’t interested in creating a menu about Japan from thousands of kilometres away,” says Executive Chef Ricardo Bojador. “The more interesting question was what happens when Japanese technique engages directly with the ingredients and realities around us. Daichi became our way of exploring that.”
Daichi sets the terms for how TANSŌ intends to evolve. The seasonal programme is not bound by geography or theme; each volume responds to ingredient, season and context as they exist in the moment. What follows remains undisclosed.
For now, Volume 01 holds to a single idea: contemporary Japanese cooking, shaped by where it is.
Daichi runs through summer 2026. Six dishes, ordered individually, AED 42 to 162.
